Alio Restaurant in Surry Hills is holding a special ‘Greatest Hits Dinner’ across the month of June to commemorate ten years in business. A fusion of old favourites and new innovations, the ten-course degustation showcases the best of Head Chef Ashley Hughes’ crisp, clean brand of Italian cuisine. Each of the dinner’s ten courses is representative of a year in business – with one dish taken from each year of the Alio menu. Running for the whole month of June as an alternative to a la carte dining, this is a once off, not-to-be-missed culinary celebration! Highlights from this decadent ten-course degustation include the 2003 dish Hawkesbury river calamari with fresh chilli and lemon – a tender, fresh and zesty celebration of flavours. The 2006 dish, Barramundi baked in a bag with black mussels, thyme and vermouth on cavallo nero, has had the most recipe requests of any dish in Alio’s ten years. Another favourite, the made-to-order Risotto with red wine, pancetta and radicchio a sumptuous dish that is indicative of the extra care and attention Head Chef Ashley Hughes puts into his food. The refreshing Panna cotta with fruit salad and mint from 2008 is a tribute to the River Café where Ashley gained much of his training. This dish is representative of much of Ashley’s food – uniquely his own, but with the foundations coming from his gastronomic experiences in London and Italy. The ‘Alio Greatest Hits’ ten-course degustation is $80 per head or $110 with matching wines, and runs for the whole month of June.
